I loved the Starbucks Carrot Loaf when they carried it. This is an approximation.
Ingredients
* 4 eggs
* 2 cups brown sugar
* 1 1/2 cups vegetable oil
* 3 cups carrots, grated
* 1 cup mixed fruit
* 1 tsp. vanilla
* 1 cup walnuts
* 1 cup raisins
* 2 tsp. baking soda
* 2 tsp. baking powder
* 1/2 tsp. nutmeg
* 1/2 tsp. allspice
* 1/2 tsp. cloves
* 2 tsp. cinnamon
* 1 tsp. ginger
* 1/2 tsp. salt
* 3 cups flour
Instructions:
1. Preheat oven to 350 degrees and grease two loaf pans.
2. In a large bowl, beat eggs until light and fluffy. Add sugar and oil. Beat well. Add grated carrots, mixed fruit, vanilla, walnuts, raisins, baking soda, baking powder, nutmeg, allspice, cloves, cinnamon, ginger, salt and flour. Mix well.
3. Pour batter into loaf pans and bake for 60-90 minutes or until a toothpick inserted near the center of the loaf comes out clean. Serves 12-16.
